This brandy is a tribute to Normandy and the finer things in life.
We press delicious Opal apples grown at Holt Farm to make our own Cotchel apple juice. We took some of this and, first creating a cider, we then created an eau de vie which we put into red wine barrels made from French Trombais Oak. Our first batch is a young 4 month brandy, akin to Calvados but smooth and flavourful. It brings rich notes of caramel and memories of the very best apple tarte tatin.
Serving: Enjoy simply over a block of ice, in an ‘Old Fashioned’ or as a ‘Norman Mule’ – 50ml Reliquum Apple Brandy, topped up with ginger ale.
