Sole of Discretion, based in Plymouth, provide the ability for fishers to land, process and sell their own fish, offering full traceability through the supply chain - a first in the UK. By working only with small-scale boats of under 10ms in length, there is significantly less damage to the marine environment than from the large trawlers. With the ability to trace back to each boat, all packs state the name of the fisher and method of catch. Recently audited by the Soil Association, they are the UK's first wild fishery permitted to use their logo.
Tony at Popsie Fish is one of the few fishers catching salmon using a static net or line, only 11% of Alaskan salmon is caught this way. Popsie fish off the beach so fuel consumption is zero, and by-catch is zero. Non-static gear caught in the generic fisheries uses plenty of fuel and discards other fish like Pollack. Popise is a family owned and run business, employing 12 people (including themselves) over the 3 month season. Proud of their superior product, they keep control over the production, icing in slurry immediately on catch, handling the fish by the head not the tail (which prevents bruising and breaking the spine) and getting the fish to the processing in top condition. Sole of Discretion support them as part of the Slow Fish Network of Small Scale fishers.
This product has been smoked at Jackson's Smokery, Newton Abbot. Established in 1922, they are a third generation business - with the fourth generation in training and receiving the knowledge of over 90 years in the fish trade!. They smoke exclusively on oak, add salt and nothing else. Jackson's have proudly produced smoked products on the premises for over 60 years.
